
Simon and Jack's Garden
Simon Hill, NBS' Manager of Food Service Operations and Jack Sobocinski, NBS' Chef de Cuisine, have planted an organic herb and vegetable garden behind NBS' Residence! The herb variety is extensive, including lemongrass, thyme, basil, chives and tarragon amongst others. The vegetables include heirloom tomatoes, English runner beans and cucumbers! Many of NBS' menus have featured our very own herbs and produce.
Meet Rebecca Dietzel, Our Nutritionist
Rebecca Dietzel, M.S. is an anatomist who specializes in biochemistry. She maintains private practices in New York City and Vermont teaching anatomy, physical re-education and nutrition.
Rebecca also teaches anatomy and kinesiology for the Ailey/Fordham BFA program. She received her Master of Science from Columbia University's Institute of Human Nutrition. She is also an Ayurvedic practitioner in the tradition of the Wise Earth School.
We asked Rebecca Dietzel, our nutrition consultant, what inspired her to become such a devoted expert in dance nutrition.
Book: A Dancer's Guide to Healthy Eating
In August 2007, Canada's National Ballet School published A Dancer's Guide to Healthy Eating co-written by NBS alumnus Alyson Yamada and Rebecca Dietzel. An easy-to-read guide about the vitamins and minerals dancers need to stay healthy and energized, it also addresses muscle and tendon health, metabolism and stress. The book also includes an entire chapter dedicated to recipes.
